I accidentally cut one of my base string on an alpha bracelet, I cut it too short to try to know in another string and keep going, is there anything I can do about it?

Maybe you could unknot a couple rows to give the base string a bit more length and then tie on a new one

That could work! But is there any other way to not do that when the bracelet is a little too big? Its just that it would be very time consuming undoing everything row by row in a big alpha pattern.

You can replace the base string without needing to tie the replacement on. Pulling the old string up and behind the bracelet, tape the new string to your workspace a little above where you're at in the pattern, then start knotting onto it as if it's already part of the bracelet. I recommend keeping it taped down until you've knotted at least 5-10 rows onto it so that it doesn't slip out.
