For the odd string one, you add an even number of strings to the dowel (this means you'll have one more string than the patterns requires), then you take the outermost thread which is that one extra thread, and just start knotting onto the base threads. For the triangle start, masha knots a a great tutorial explaining how to do it

You can also just do a larks head knot with one side much longer than the other somewhere in the middle of your dowel. Then, just knot over the extra tail on the end. That way, you can have an odd number of strings, but your leading string doesn’t have to be the same thickness as your base strings.
