I’m working on a starburst right now too! What I find really helpful is to try to knot the strings into the pattern whenever possible. In the pattern, between the colored portion on the side there is usually a white triangle in the middle, instead of knotting forward knots on the right side, I do backward knots so that it’s going into the pattern. Another tip I can give is to really pull the end strings as taught as possible when you’re knotting on them so that the edges stay straight. I find that if certain sections are a little wonky, you can usually straighten them out a little bit if you pull in it gently to loosen some of them knots. Hope this helped!

There are a few things that may help, but, generally you just want to make sure your strings are the same size in thickness. If that doesn't work, you may want to try the straight edges technique, @Racoon (Masha Knots on youtube) has a great video on it.
