I've made around 15ish bracelets and a decent amount of them come out weirdly curved. How can I make sure they don't do that?

Have you tried the straight edges technique? Masha knots has a great tutorial on both the straight edges and flat alpha technique. These should help make your bracelets flatter and have neater edges. You can use a ruler to straighten out each row/edges as you make the bracelet. Also, make sure your strings are all the same size to avoid uneven knots.

Another way is when making your bracelet, have it fastened closer to where you are knotting so it doesn’t start to curve when you are knotting. If you are noticing your bracelet starting to curve you can try to “wiggle” the uneven part to try to even it out (I’m not sure if this one make sense 😅). Some pattern structures are uneven and can result in weird edges. Also what the others said above works as well. Try messing around with the techniques to see which one gets the best results for you. Have a great day and hope this is helpful to you! 🙃
