There is a technique for both normal and alpha patterns to fix that (masha knots has a tutorial for both) however I feel like the one for normal patterns isn’t necessary. It’s one of those things that comes with practice so try practicing keeping your knots consistent and maybe making your edges tighter.

Oh that happens to me all the time! I’d say to just take a slip of paper and place it under the row your on and keep it there if you stop. Then when you want to continue you’ll know where you stopped!
