I can do a candy stripe and a V but I’m not really sure how to get started with more, so what should my string limit be?

I think around 8 strings is a good place to begin. I wouldn't go above 16 strings.

It also always depends on the structure of the pattern. Patterns like #1 or #2 are relatively easy no matter how many strings you use. Just because a pattern uses more strings, does not mean it's harder.

For a beginner, I wouldn't recommend anything over 16 strings. You can make a larger chevron with either more colors or double color stripes if you feel comfortable. Hope this helps!

I would say at first rather less (so best not to start with 165 or so 😆😆) but I think there are also sometimes some with few strings that are very difficult and also some with many sides that are very easy, maybe you can set the degree of difficulty to 1-3 or so in the selection.
