Let's say that I only needed to make one knot for an alpha and I use a short string for it...Do I just cut off the remaining tail and excess string after that one knot? Would it untie/untangle and ruin the project? Is there a way to "weave in the ends" as they do in crocheting or is it completely fine?

I would recommend using the flat alpha technique. I feel like it's a little more secure. But yes, you just cut the loose ends in the end. I'd wait a few rows until after you made the last knot with that colour to cut the end.

with bracelets i simply cut them off and i have no problem with them, i would suggest to maybe use a bit of glue or nailpolish if it is the last string hanging (like the leading string) to ensure it doesn’t unwrap. I do glue down my keychains just to make sure as i don’t mind if it’s stiff !
