yes you can, they have great reviews, make sure to only use that thread with that tread and not inter mingle them with other threads, if you feel comfortable using them I see no problem using them, can't wait to see the creations you make!

This thread would be way too thin to make bracelets with, compared to DMC or other embroidery floss. I suggest searching specifically for embroidery floss. Amazon has a lot of bulk packs for them and they are also quite cheap.

for string, i would say that it's really all about preference. personally, i use dmc, but i know some people who make beautiful bracelets that don't. the only thing that id advise is refraining from mixing different thread thicknesses to avoid whatever you're knotting to have a bumpy feel.
