Why are most normal patterns just patterned and very few images?

I noticed most images and such are alphas. I don't really like making alphas, but when I was a kid I did Kandi bracelets which had a similar offset to normal bracelets. I'll probably make normal designs that are more pictures than patterns, but I find it weird there's no characters or scenes or things like that. Is it just because it's easier to make alpha patterns and that it's just like pixel art?

Yes, it’s easier to make images into alphas. Typically the more colors in a normal image, the more difficult it is to design

Their is also a lot of fb and bf knots, which can be a bit of trouble and annoying to do for some.

usually it's because making images on normal patterns is very difficult to knot and there would be lots of bf and fb knots which can get annoying. it's also harder to make the actual pattern an image if it's a normal pattern because you can't upload an image and tweak it

and because it’s extremely difficult to get colors where you want them to be bc you have to start all with the same colors so if you’re doing sth w like one dot of red or something, you’re stuck with that red string and it may be impossible to not not use it in the bracelet.

In an alpha any knot can have any colour. In normal patterns you are much more restricted. Not everything is possible.
