I would start with the chevron. I wouldn’t do a candy stripe because you only do one type of knot. With a chevron you can learn 2 types of knots.

Learn your knots and then try a candy stripe or a chevron.it practices forward and backward knots

I would actually recommend starting with a chevron first because it is basically just a candy stripe on both sides. And it will teach your hands not to favor only forward knots as candy stripes only use that one knot. As chevron uses both forward and backward knots. If you are looking for more help as already mentioned, Masha Knots on YouTube has amazing tutorials that would help you out tons I'm sure!
