My alphas always look stretched lengthwise so like an animal pattern always looks really long and thin, I have no idea why

Try using thicker base strings or maybe doubling up your base strings. This way your knots will be wider.

I use crochet thread which is a bit thicker than normal embroidery floss, and it has worked like a charm for me so far

It's becasue each knot is shaped like a rectangle and not a square, I would try thicker base strings to widen the knots a bit.

Try making sure each knot is the same size, like @rene86120 said, each knot is in the shape of a rectangle, not a square, so if you loosen the knots a tad they will be more square like. You can use crochet thread for base strings to make it more sturdy.
