does setting strings aside each row matter

You know how in most patterns it says to set aside the 2 edge strings does that really matter and how do I make my edges look straight because I messed up my bracelet from the start from the start and the edges are not straight

I have wanted to quit because of the strings and the non straight edges but I’m going to keep doing it because I want to make Harry Potter scarf bracelets for my friend so I’ll keep trying
